Cleaning removes visible dirt and food residue. Sanitizing kills bacteria and pathogens that remain after cleaning. Both steps are necessary for food safety — especially after cutting raw meat, poultry, or fish on a wooden board. Here's how to sanitize a wooden cutting board effectively without damaging the wood.
What You'll Need

Method 1: White Vinegar (Best for Regular Sanitizing)
- After washing and rinsing the board, wipe the surface with undiluted white vinegar using a cloth or paper towel
- Make sure to cover the entire surface including edges
- Let sit for 5–10 minutes
- Rinse quickly with water and dry immediately
White vinegar kills most common kitchen bacteria including E. coli and Salmonella. It's safe for wood and leaves no harmful residue.
Method 2: Hydrogen Peroxide (Stronger Sanitizing)
