How to Store Tofu in Refrigerator

How to Store Tofu in Refrigerator

Tofu is a versatile, protein-rich ingredient — but it's also highly perishable once opened. With the right storage method, you can keep tofu fresh for up to a week in the refrigerator. Here's how to store tofu properly.

Unopened Tofu

Unopened tofu in its original sealed package can be stored in the refrigerator until the use-by date — typically 2–3 months from production. Keep refrigerated at all times; don't leave at room temperature.

How to Store Opened Tofu

Once opened, tofu must be stored in water to prevent it from drying out and to maintain its texture. This is the most important rule for tofu storage:

  1. Drain the original liquid — Pour out the liquid from the package.
  2. Place tofu in a container — Use a ComSaf Glass Jar with Airtight Lid or a ComSaf Airtight Container large enough to hold the tofu block.
  3. Cover completely with fresh cold water — Submerge the tofu fully. The water keeps it moist and prevents the surface from drying out or developing an off flavor.
  4. Seal and refrigerate — Store on a main shelf.
  5. Change the water daily — Fresh water prevents bacterial growth and keeps the tofu tasting clean. This is the key to extending freshness.

Storage by Tofu Type

  • Silken tofu — Most delicate. Store submerged in water and use within 3–4 days of opening.
  • Soft tofu — Store submerged in water, use within 4–5 days.
  • Firm tofu — Store submerged in water, use within 5–7 days.
  • Extra-firm tofu — Most durable. Store submerged in water, use within 5–7 days.

How Long Does Tofu Last in the Refrigerator?

  • Unopened (refrigerated): until use-by date
  • Opened silken/soft tofu (in water): 3–5 days
  • Opened firm/extra-firm tofu (in water): 5–7 days
  • Frozen tofu: up to 3 months

How to Freeze Tofu

Freezing tofu dramatically changes its texture — it becomes chewier, spongier, and more porous, which makes it excellent for absorbing marinades. Drain and press tofu, then freeze in a SPLF Reusable Freezer Bag. Thaw in the refrigerator overnight, then press out excess water before cooking. Frozen tofu lasts up to 3 months.

Signs Tofu Has Gone Bad

  • Sour or off smell
  • Slimy surface (even after rinsing)
  • Yellow or brown discoloration
  • Bloated or puffed packaging (unopened)
  • More than 7 days since opening

Quick Tips Summary

  • ✅ Store opened tofu submerged in fresh cold water
  • ✅ Change the water daily for maximum freshness
  • ✅ Use a glass jar or airtight container
  • ✅ Freeze for a chewier texture great for marinating
  • ❌ Don't store opened tofu without water — it dries out and spoils quickly
  • ❌ Don't skip changing the water — stale water causes off flavors
