The Danger Zone: Why Temperature Matters So Much

Bacteria that cause foodborne illness — including Salmonella, E. coli, Listeria, and Staphylococcus aureus — multiply most rapidly between 40°F and 140°F (4°C and 60°C). This range is known as the Temperature Danger Zone.
